Soba Noodles with Roasted Sesame Dressing, Mushrooms and Edamame




SOBA NOODLES WITH ROASTED SESAME DRESSING, MUSHROOMS AND EDAMAME

Ingredients:
A packet of soba noodles
Kewpie deep roasted sesame dressing
Edamame, cooked and shucked
Mushrooms, sliced
sesame seeds
1 teaspoon butter
garlic, grated
Water

Steps:
1. Cook your soba according to instructions in boiling water, immerse it in cold water to stop the cooking process, then pour some hot water over it to make it to room temperature. Cook your edamame (pic below) in boiling water with a pinch of salt till the beans are tender but still ‘crunchy’. Shuck the edamame till you have about a rice bowl-full.

2. Heat a pan with the butter, add in the grated garlic and then the mushrooms. Cook the mushrooms but don’t let it overcook.

3. Pour about 2/3 cup of the dressing into a big bowl. Toss in your mushrooms and then the soba and edamame. Mix everything together.

4. Garnish at the end with some sesame seeds or mixed seaweed.
