Stir fry chicken wings with ginger in sesame oil

Ingredients
(Serves 2-3)

- 4 chicken wings, I only use drumlettes & mid-joint (you can also use chicken thighs)
- 2 tbsp sesame oil
- 5 slices ginger and sliced thinly
- Chinese cooking wine: Hua Diao Jiu (optional)
water mixture
- 5 tbsp water mixed with 2 tbsp light soy and 1/2 tsp dark soy (optional for dark soy)
(stir well)

Directions
1. Heat sesame oil, then add ginger strips. Stir fry till golden brown.
2. Add chicken pieces and stir fry for a few minutes.
3. Add water mixture and stir to make sure the chicken pieces are well coated with the sauce. Cover and simmer for about 5 minutes.
4. Open lid, add more water if the mixture is drying out, and stir constantly for another 8 minutes.
5. When the chicken is cooked, add 1 tbsp of Hua Diao Jiu and stir fry for few seconds you can smell the aroma of the wine evaporating. Off the flame and serve.
Note: if you prefer more gravy for rice, use 50ml water with 2 tbsp light soy and 1/2 tsp dark soy (stir well)
